Dairy-Free “Snickers” Pie: Creamy, Crunchy & Completely Irresistible

This dairy-free “Snickers” pie has everything you love about the classic candy bar — rich chocolate, salty peanuts, gooey caramel, and a smooth, creamy filling — all transformed into an indulgent frozen dessert made with simple, wholesome ingredients. Featuring a chewy peanut butter oat crust, a velvety cashew “ice cream” layer, luscious homemade caramel, and a decadent dark chocolate topping, this pie is the perfect balance of sweet and salty. It’s naturally dairy-free, gluten-free, and guaranteed to impress!
Crust:
1 cup Gluten Free Oats
2 tbsp maple syrup
⅓ cup all natural peanut butter
“Ice Cream” Layer
1/2 tsp Vanilla extract
4 tbsp Coconut oil
1 cup raw cashews, soaked in water for 4 hours
½ cup coconut cream
3 tbsp maple syrup
Caramel
1/2 cup All natural Peanut butter
5 tbsp Coconut sugar
Pinch of salt
¾ cup coconut cream
3/4 cup Peanut, unsalted halves
Chocolate Layer:
1 bar 70% cacao vegan dark chocolate
½ cup coconut cream
Decorations:
Drizzled peanut butter
Kosher Salt
Chopped peanuts
In a food processor fitted with the knife blade or a blender mix together the oats, Maple Syrup, peanut butter and blend. Press into pan and place in freezer. While it’s in the freezer, strain the cashews and put them in the food processor or blender with the coconut milk, coconut oil, maple syrup and vanilla extract and blend thoroughly until smooth. Take the crust out of the freezer and pour the cashew cream over it. Return to freezer.
While that’s in the freezer, make the caramel: Place coconut milk, peanut butter, coconut sugar and salt in a saucepan and warm through while mixing. When smooth, turn off fire and cool.
Take out the pie from freezer. Layer the peanut halves over the cashew cream. Pour the caramel mixture over the peanuts and return to freezer.
While it’s in the freezer, make the chocolate layer: Melt the chocolate in a double boiler. Add the coconut milk and mix until smooth.
Remove the pie from freezer. Pour chocolate over the top. Daecorate with kosher salt, chopped peanuts, and drizzled peanut butter. Return to freezer for 6 hours.
